Pesto Chapaco
Historia:
Basado en la famosa salsa italiana para pastas, a modo de homenajear a nuestro estilo aquel precioso territorio europeo, en Tarija donde se tiene vocación de ser una tierra de inspiración cultural mediterránea, donde se cultiva la albahaca, crecen árboles de nueces y olivas, y se elaboran deliciosos quesos artesanales de vaca y cabra, la idea representa un desafío para diversificar e impulsar el uso de la albahaca y los demás ingredientes de un modo tradicional en las comidas cotidianas. También en estos tiempos ajetreados incluso en Tarija (aunque ud. no lo crea) representa un manjar muy practico : cocinar fideos(pasta), mezclar con este pesto y la cena está hecha!
Así nació la presente adaptación del Pesto alla Genovese a un estilo más tarijeño (también llamado chapaco): se mezclan ingredientes de las dos importantes regiones del departamento con el uso del queso de nuestro Chaco y las nueces del valle central en lugar de Parmigiano y Pinoli.
Ingredientes:
Albahaca de hoja grande (italiana) orgánica, nuez del valle, queso chaqueño, olivas, jugo de limón, aceite, sal y especias.
Usos:
Usar una cucharada bien colmada por cada 100g de pasta cocida al dente. Mezclar ambos en una olla a fuego lento y si se desea agregar un chorrito más de aceite oliva. Refrigerar una vez abierto.

Thus was born this Pesto alla Genovese adaptation to a more Tarija (also called Chapaco): mix ingredients in two important areas of the department with the use of cheese and walnuts our Chaco Central Valley instead of Parmigiano and Pinoli .
Ingredients:
Large basil leaf (Italian) organic nut valley, Chaco cheese, olives, lemon juice, oil, salt and spices.
Uses:
Use a tablespoon firmly packed per 100g of pasta cooked al dente. Mix them in a saucepan over low heat and if you want to add a splash more olive oil. Refrigerate after opening.
